Dr. Andreas Eenfeldt, M.D., longtime proponent of the low-carbohydrate/high-fat diet, breaks down some flaws in the low-carbohydrate/insulin model, intermittent fasting, and how the food industry makes its money off of the hedonic nature of processed foods. Dr. Eenfeldt explains how carbs and insulin are likely only part of the problem, and people often replace carbohydrates with highly processed low-carb alternatives. Processed foods are hedonic — even when not high in sugar. There are low-sugar processed foods that can still trick the brain into overeating. Dr. Eenfeldt expresses why he thinks satiety is the key to maximizing metabolic health, and that focusing on unprocessed foods that are high in protein, understanding energy density, and eating foods low on the hedonic scale can best increase satiety.

Firstly how do you get good nutritious food to lower income families. This is where majority of the problem lies.


Secondly, I think you should watch the 4th episode of Down to Earth available on Netflix or YouTube or Amazon. This episode highlights the residents of Sardinia. Here there are a high number of centenarians and their diet consists mainly of Carbs. In addition there are similar cases in Japan where their diet is 10:1 carbs to protein.


I also belive that the public needs to be educated about the type of carbs thst should be consumed. There's nothing wrong with eating wholegrain foods.
